From handwritten ledgers and aviation catering to luxury resorts and digital travel platforms, the inspiring journey of a woman leader who transformed challenges into opportunities and redefined hospitality with purpose, resilience, and heart.

“I belong to a generation that witnessed two completely different worlds.”

This simple yet profound statement by Mini Sajan Varghese, CEO of SAJ Group of Hotels & Resorts, perfectly captures not only her personal journey but also the remarkable evolution of modern India itself.

From an era when landline telephones were considered luxuries and business records were maintained manually, to today’s world powered by artificial intelligence, digital connectivity, and online travel platforms, Mini has successfully navigated change after change—emerging as one of Kerala’s most respected hospitality leaders and women entrepreneurs.

Yet her story is far more than a tale of professional achievement.

It is a story of learning, resilience, leadership, empowerment, and the relentless pursuit of excellence. It is about building institutions, creating opportunities, nurturing people, and crafting experiences that leave lasting memories.

Today, under her dynamic leadership, SAJ Group of Hotels & Resorts has become synonymous with quality, innovation, authentic Kerala hospitality, and inclusive growth. But the journey to the top was neither sudden nor straightforward. It was built patiently—one lesson, one challenge, and one opportunity at a time.

The Foundation Learning from the Ground Up

Behind every successful leader lies a strong foundation.

For Mini Sajan Varghese, that foundation began in the world of finance and banking, where she developed discipline, systems thinking, and a deep understanding of financial management. These early experiences would later become invaluable in steering large-scale business operations.

Marriage introduced her to a completely different industry—aviation catering.

Her entry into the aviation hospitality sector began at SAJ Flight Services, established by visionary entrepreneur Sajan Varghese, where she initially worked as an accountant and steadily evolved into a key force within the organization. What seemed like a routine role soon evolved into an immersive learning journey. Rather than confining herself to financial reports and accounting functions, she actively sought to understand every aspect of the business.

Operations, logistics, quality control, food safety systems, crisis management, administration, customer expectations—she learned them all.

Her philosophy was simple

Before leading, one must learn.

Over time, her hands-on involvement and commitment to understanding the organization from the grassroots level enabled her to rise through the ranks, eventually becoming CEO overseeing six flight catering units.

Learning Before Google Existed

Today’s entrepreneurs have access to limitless information at the click of a button.

Mini’s generation did not.

There were hardly any books on flight catering, and finding reliable online resources, tutorials, or ready references was a challenge, she recalls.

Knowledge had to be pursued through observation, discussions with experts, site visits, practical exposure, and relentless curiosity.

Her pursuit of excellence eventually took her to London, where she underwent specialized training in international food safety standards and quality management systems. The experience broadened her global perspective and deepened her expertise in hospitality and catering operations.

Those years taught her a lesson she still carries today

Excellence is never accidental. It is built through discipline, learning, and continuous improvement.

The Silent Mentor Who Shaped a Leader

When asked about the greatest influence on her journey, Mini speaks with immense admiration about her husband, Sajan Varghese.

However, his mentorship came in an unconventional form.

He never believed in spoon-feeding solutions, she says. Instead, he encouraged independent thinking, analysis, and problem-solving.

One of the greatest responsibilities he entrusted to her was financial planning and management, particularly during periods when revenues fluctuated while operational expenses remained constant.

These experiences sharpened her decision-making abilities, crisis-management skills, and long-term strategic thinking.

It was a silent style of mentoring, she reflects, but it shaped me more than direct instruction ever could.

When Challenges Created New Opportunities

The mid-2000s brought a major turning point for SAJ Group.

The aviation industry was undergoing significant transformation. The rise of low-cost airlines and changing business dynamics reduced demand for traditional in-flight catering services. For many companies, these developments represented threats.

For SAJ Group, they became opportunities.

Guided by the vision of Sajan Varghese, the organization diversified into hospitality.

The move was bold and ambitious.

Building hotels was one challenge. Building a trusted hospitality brand capable of consistently delivering exceptional guest experiences was another.

Mini became one of the key architects of this transformation.

Her deep understanding of operations, quality systems, customer expectations, and people management helped create a hospitality culture that would eventually become the hallmark of the SAJ brand.

Hospitality: A Science, an Emotion, and an Experience

Many people associate hospitality with luxury, aesthetics, and service.

Mini sees it differently.

Her academic background—a Master’s degree in Zoology from the University of Kerala—provided her with a scientific mindset rooted in microbiology, food science, ecology, genetics, statistics, and analytical thinking.

These disciplines unexpectedly became highly relevant in hospitality operations.

Her scientific understanding strengthened food safety protocols, hygiene systems, HACCP implementation, quality control mechanisms, and operational discipline. Later, she further enhanced her expertise through certifications in Food Safety Management and Baking & Pastry.

Yet for all its science and systems, Mini believes hospitality is ultimately emotional.

Guests may forget room dimensions or decorative details, she says, but they always remember how a place made them feel.

That philosophy has become deeply embedded in the culture of SAJ Hotels & Resorts.

Building a Brand Guests Trust

Hospitality is fundamentally a business of trust.

Guests entrust hotels with their comfort, safety, celebrations, business engagements, and precious memories.

Understanding this responsibility, Mini helped shape SAJ into a brand that offers more than accommodation—it offers experiences.

Whether welcoming leisure travelers, business executives, families, wellness seekers, or international tourists, SAJ properties focus on personalized service, meticulous attention to detail, and genuine warmth.

This commitment has earned the brand loyalty, credibility, and admiration among guests from around the world.

Creating Distinctive Destinations

Over the years, SAJ Group has developed a portfolio of properties that reflect the unique character of their destinations.

SAJ Earth Resort, the group’s flagship five-star property near Cochin International Airport, blends luxury, privacy, nature, and experiential hospitality. It serves business travelers, transit guests, leisure tourists, and MICE visitors alike.

SAJ Vagamon Hideout, surrounded by plantations and mist-covered hills, has become known for eco-conscious hospitality and earned the Government of Kerala’s Best Eco-Friendly Resort Award in 2006.

SAJ Luciya, located in the heart of Thiruvananthapuram, remains one of Kerala’s landmark four-star hotels serving business travelers, dignitaries, pilgrims, and families.

Leading with Empathy and Empowering Women

One of the defining aspects of Mini’s leadership is her commitment to women empowerment.

Having risen through a highly competitive industry herself, she understands the barriers women often face in professional environments.

At SAJ Group of Hotels & Resorts, women are given significant employment opportunities, including odd-hour shifts, with strong focus on safety, dignity, and respect for both women employees and solo women travelers.

For Mini, empowerment is not simply about employment—it is about creating workplaces where women feel respected, valued, secure, and capable of reaching their fullest potential.

Her commitment extends beyond the workplace.

Recognizing the concerns faced by solo women travelers, particularly those arriving on late-night international flights, SAJ introduced guest experiences focused on safety, comfort, and reassurance. The presence of women employees across guest services and security functions contributes to an atmosphere of trust and confidence.

Finding Strength During the Pandemic

Like every hospitality organization worldwide, SAJ Hotels & Resorts faced immense uncertainty during COVID-19.

But instead of focusing solely on challenges, Mini looked inward.

She realized many features that had long existed within SAJ properties—open layouts, independent air-conditioning systems, spacious pathways, privacy-oriented designs, and strong connections with nature—perfectly aligned with emerging traveler expectations.

What had once been considered ordinary strengths suddenly became powerful competitive advantages.

By recognizing and repositioning these hidden assets, SAJ adapted more quickly than many competitors and successfully regained guest confidence.

For Mini, the experience reinforced an important lesson

Leadership often means discovering hidden strengths within existing systems and adapting them intelligently to changing circumstances.

Recognition, Challenges, and Inner Strength

Despite receiving numerous awards and accolades, Mini’s journey has not been without emotional challenges.

One particularly painful experience occurred when she was denied recognition because she was viewed merely as the wife of an entrepreneur rather than an entrepreneur in her own right.

Rather than allowing disappointment to define her, she transformed it into motivation.

She firmly believes entrepreneurship extends far beyond investing capital or launching ventures. Building systems, managing operations, solving problems, adapting continuously, and creating long-term value are equally entrepreneurial pursuits.

Her message to aspiring women leaders is simple yet powerful

Never underestimate your capability because someone else fails to recognize it initially.

Beyond Business: A Writer, Tourism Advocate, and Lifelong Learner

Few people know that Mini is also an accomplished writer.

Following the prestigious Mercury Silver Award earned by SAJ Flight Services, Mini received a rare distinction—an invitation to write for the renowned “4 Corners” section of Onboard Hospitality, one of Europe’s leading hospitality publications. Representing one of the “four corners of the world,” she shared news, industry trends, observations, and insights from India with a global readership. Her contributions not only reflected her deep expertise in aviation catering and hospitality but also showcased her ability to present regional perspectives with international relevance.

She also serves as an Independent Director of the Lakshadweep Tourism Development Corporation and remains deeply passionate about the future of sustainable tourism.

She believes the future belongs to destinations that offer authentic experiences, emotional connections, wellness, culture, sustainability, and responsible tourism.

For Kerala and Lakshadweep, she sees tremendous potential—but emphasizes that development must never compromise ecological balance, cultural uniqueness, or natural beauty.

Finding Joy Beyond Boardrooms

Despite an intensely demanding professional life, Mini Sajan Varghese finds her greatest happiness in simple moments and meaningful relationships. The companionship she shares with her husband, Sajan Varghese, remains one of her strongest sources of strength and joy. Whether travelling, sharing conversations, enjoying movies, or taking quiet walks together, these moments are deeply cherished.

She also enjoys cooking, hosting guests at home, and spending time with her Labrador boys, Rocky and Romeo, whose affection fills her home with warmth and happiness.

A Legacy Beyond Hospitality

Today, as Mini Sajan Varghese continues to strengthen the SAJ brand, she is also charting a new course in the digital travel landscape. Expanding her entrepreneurial footprint beyond traditional hospitality, she is spearheading the development of an online travel aggregator platform designed to connect travelers with seamless, technology-driven booking experiences. The venture reflects her forward-thinking approach, adaptability, and commitment to evolving with changing consumer preferences in an increasingly digital world.

From banking to aviation catering.

From finance professional to CEO.

From learner to mentor.

From observing change to driving it.

Her story reflects the evolution of an extraordinary woman who successfully bridged two worlds—one rooted in traditional values and another defined by technological transformation.

More importantly, it reflects a leader who understands that true success is not measured merely by businesses built or awards received, but by the lives touched, opportunities created, and values preserved.

As SAJ Group continues its journey of growth, innovation, and excellence, Mini Sajan Varghese remains at its heart—a visionary leader whose legacy extends far beyond hospitality.

Because, in the end, her greatest achievement is not simply building hotels.

It is building trust, creating memories, empowering people, and proving that meaningful leadership can remain relevant across generations.
